TACO NIGHT: Mushroom, green pepper & chilli tacos

Photo 01-02-2016, 19 19 05So, hey you guys. Last week was a bit of a flipping full-on one for me. Vet visits, 2-hour commute delays, uber busy at the office….. I admit to spending the majority of the weekend horizontal on the couch eating garlic bread and Skips.

When Monday came around I figured I’d better eat at least one type of vegetable for dinner. I had an intense taco craving, and was feeling brave after the spiciest meal of my entire life, which I consumed and survived last week (see previous post). Additionally, I was proper dead inspired by Sal’s new vlogging posts (that’s video blogging folks, if you didn’t know) which are super fun to watch (and informative too!)

One of the problems with my house (and, erm, the north of England) is that it’s always really shady and dark. I decided to go ahead and make y’all a little video anyway cos I’m ace/foolish like that. So here’s a video to get you inspired, and then a recipe to follow. PLEASE BE GENTLE, IT’S MY FIRST TIME ❤ (Taco song by Parry Gripp! )

Ingredients

  • One large white onion, chopped.
  • One large green pepper, chopped.
  • A coupla green chillies, chopped (OR, use something like chilli oil, which I did).
  • 4 fat garlic cloves, minced.
  • 1.5 – 2 cups chopped mushrooms.
  • Taco spice mix: 3 tsp cumin, 1 tsp oregano, salt & pepper.
  • Crispy lettuce.
  • Taco tortillas (I used wheat because I have no respect for the taco :/ )
  • Extras: I used refried beans, grated Violife, guacamole and chopped ripe tomatoes.

Directions

Fry up the onions, pepper, chillis and garlic for a few minutes. Add the mushrooms and fry for a few minutes more. Add the spice mix and stir well, then set to a low heat, stirring occasionally.

Throw your tortillas in the oven (if that’s how you prepare them) and heat up the beans (if you’re using them). Chop up your lettuce, avocado, tomatoes, etc.

Double or triple this recipe for a group sitting. Enjoy your tacos!

I lied a little bit about the weekend; I did spend most of my time sitting on my ass, consuming delicious snack foods and re-watching the new X-Files (OMG OMG OMG OMG) but I also dragged myself to the hairdresser on Saturday morning for a big ol’ trim. Whaddya reckon?

    1. Aw thanks Julie! The tacos were sooooo good. I think I might need to reinstate my weekly Mexican food night. It used to be Fajita Friday but maybe it’s time to get Taco Tuesday going 🙂
