Creamy Cauliflower ‘Cheese’

I have to be honest, I’m not the biggest cauliflower fan. I don’t think it’s so much do with the cauliflower itself, I think it’s just that I love broccoli soooooooooo much. I always reach for a broccoli instead of a cauliflower. But I’ve been forced to guzzle lots down lately since they keep appearing in my weekly veg box. I’ve done a creamy cauliflower sauce, and I’ve done caulipots. I decided it was cold and wet enough last night to attempt a cauliflower cheese.

Additionally, I am fully gripped by the flu-plague at the moment. I’ve been tossing and turning and moaning and nose-blowing and coughing since Wednesday morning and I’ve heard it’s best to feed a cold, so I thought I would feed it GOOD.

I had a stray 3/4 can of coconut milk in the fridge by happy coincidence, and managed to throw together this ratherrrrrr tasty beast…..

Ingredients

  • 1 cauliflower (plus any other veg you want to use – I added new potatoes, hasselback style)
  • 1 cup soya milk
  • 1 cup coconut milk
  • 4 tbsp nutritional yeast
  • 3 tbsp plain flour (I used Waitrose thickening flour)
  • 3 cloves garlic
  • 1 tsp mustard
  • Pinch salt
  • Pinch turmeric
  • Pinch of nutmeg (if you’re feelin’ fancy)
  • Big knob of margarine (I used vitalite)

Directions

First, parboil your veg and put it into a shallow and wide oven dish.

Blend all other ingredients together until smooth. Heat the sauce up in a pan and keep whisking til it starts to thicken. When it thickens up, pour it over the veg.

I put chilli flakes and black pepper on the top before it went into the oven.

Bake at 180°C for about 30 minutes, or until it starts to go brown & bubble.

If that doesn’t get you in the winter mood, then this might…… I felt awful that my poor pooch had spent days comforting me as I lingered between this world and the next, popping cold & flu tabs and binge-watching PBS, cursing the fact that I’d never taught Vulpe how to make tea….. My man is down in Bristol at the moment, and my Mum has a lurgy too, so the colossal, awful reality of adulthood has been hitting me hard.

My poor poochums looked so despondent this morning that I forced myself to have a shower and a medicinal amount of marmite of toast, fill up on a variety of decongestants, put on my winter socks and wellies, and take her on a proper romp…….

I subjected my long-suffering pup to a warm bath and some really rather fancy organic doggy shampoo (with patchouli, dontcha know) on our return. I put the kettle and the fire on, and here I sit. There is very little chance of me moving much more for the next few hours (nor this snoozy pooch). Miaowski is also very pleased about the kind of weather that merits turning the fire on…..

What’s your favourite winter recipe? I definitely think I’ll be making this again since, apparently, we are heading for sub-zero temperatures soon enough 😥

  1. That looks amazing. I love the idea of adding potatoes. I've been making a sort of cauliflower cheese soup a lot recently just cooking some with onion and stock and then adding Nooch, garlic powder, lemon and mustard in the blender. Get well soon!

    1. Ahh that sounds lovely! Sadly I killed my blender a few weeks ago in a tragic soup incident, but I’m hoping Santa will bring me a hand blender for Christmas 🙂
