Ok you guys, this is not my recipe! Oh no! It’s actually way simple, but I nicked it shamelessly from someone else.
Recently we held another excellent Manchester Vegan Potluck, and one of our lovely regulars brought an amazing platter of sandwiches including egg mayo, tuna mayo and cheese. ALL VEGAN! The theme was party food and the sarnies were adorable and yummy. We all thought Christine might have seen the recipe on a blog post that’d been doing the rounds from Mouthwatering Vegan Recipes but she’d actually used a different one. Enquiring minds were desperate to know how it was done, and Christine kindly let us all in on the secret… THANKS CHRISTINE!
- 1 pack firm tofu, well pressed and chopped finely.
- 1 tsp Vegg made up with 1/4 cup water or soya milk (I used soya milk)
- olive oil, salt and pepper
Yep! That’s all!
Lightly fry the chopped tofu in olive oil and a bit of salt. When it’s lightly browned, add the ‘yolk’ and stir in well, cook over a very low heat for a minute or two more. Either serve warm on toast, or let cool and serve on your lovely Summer picnic sarnies 🙂
