We enjoyed the Manchester Vegan Potluck Festive Edition this past weekend. One of our attendees made an absolutely delicious almond feta, which inspired me to make my own ASAP! I made own rather more herby and garlicy, and after leaving it in the fridge overnight, was ready to have a go at it today….
I had some homemade shortcrust pastry left over from yesterday’s pie, and decided to go right ahead and put the cheese into a recipe…..if you can even call it that! This is so simple (once the cheese is made!) – it’s perfect Christmas party food.
Roll out your pastry (or use ready rolled) and cut out large circles. Press the circles gently into a shallow bun tray, oiled with a little olive oil, and add the cheese, chopped onion and chopped tomato.
Bake for around 10 minutes at 200°C or until the pastry is thoroughly cooked.
This cheese is so easy to make, and requires no fancy ingredients – simply blitz everything in the blender, leave overnight, and bake. I highly recommend you give this a go – add it to your cheeseboard at Christmas and see if anyone notices! 🙂
