Joy of JOYS dear readers, I have invented a new and exciting cuisine! I’m going to call it “Euro-Fusion”, and it begins with this spicy chorizo lasagne.
It’s a funny old thing how we Brits prefer to call a lasagne a lasagne, and our American friends (quite rightly) use ‘lasagna’. A part of me knows I am being grammatically incorrect, but by god I can’t bring myself to do the right thing. So a chorizo lasagne it is….
- 2 of your favourite chorizo sausages, sliced
- 1 large onion, chopped
- 3 cloves garlic, finely chopped
- 1 red chili pepper, finely chopped
- 1 tsp basil
- 1 tin chopped tomatoes
- 1 tbsp tomato paste
- 1 courgette, sliced into long diagonal slices
- lasagne sheets, pre boiled if necessary
- 1/2 cup nutritional yeast
- 2 heaped tbsp plain flour
- 2 heaped tbsp cornflour
- 3 further cloves garlic
- 2 cups vegetable stock
- a generous glug of olive oil
- salt & pepper to taste
- Wholemeal breadcrumbs (fresh are much better) mixed with garlic flakes
Begin by pre-heating the oven to 180°C. Sauté the onion, garlic and chorizo in a little olive oil until the onion is softened and the sausage starts to brown. Add the chili and basil, and the chopped tomatoes and paste. Let it simmer over a low heat for 10 minutes.
Meanwhile, pan fry the slices of courgette in a little olive oil, salt & pepper until browned.
Make the white sauce by combining the nutritional yeast, flours, garlic, stock, olive oil and salt & pepper in a blender until thoroughly mixed. You will need to heat the sauce in a pan in order for it to thicken – it should only take a few minutes but you will need to whisk it constantly until thickened.
[A little notez-bien at this point to say that, regardless of the packet’s instructions, I always pre-boil my lasagne sheets slightly as there’s nothing more devastating than slicing into the oven dish and finding them undercooked….this lasagne only needs 10-15 minutes in the oven at most so I would highly recommend softening them first.]
Depending on how much pasta you like in your lasagne, line the bottom of a square oven dish with 2 sheets (spray with oil first). Then add the spicy chorizo mixture, and a layer of lasagne sheets on top. Then add half of the white sauce and layer the courgette slices on top. Add another layer of lasagne sheets, then pour the remaining sauce on top. Sprinkle with the breadcrumbs and bake for 15 minutes or until nicely crispy/browned.
Serve with a green salad.
You might find the spicy/lasagne combo a little strange, and if so you can leave out the chili. But reviews in my house were positive. Euro-fusion IS GO!
