Vegan With A Vengeance – the book that started it all! This is my version of the VWAV tagine, tweaked based upon the scientific principle of What’s In The Fridge/Cupboard And Needs Using Up……. I used to be afraid of couscous (amongst other grains) but these days I can’t imagine why! It’s easy peasy as far as your side grain goes. I use vegetable stock and this recipe – though I would half this for two people as it makes a big ol’ pot o couscous!
